*Our head chef Florian Grünzinger has shared his recipe for “gratinated Maultaschen” with us. A true classic. And maybe, with a salad, it’s also justifiable. Have fun trying out the recipe.*

**Ingredients (for 4 people):**

- 500 g dumplings
- 60 g cooked ham
- 30 g of mushrooms
- 80 g grated cheese (Emmental)
- 60 g Pesto
- 10 g basil
- Hollandaise sauce
- 1 onion
- 2 egg yolks
- 100 g of butter
- 60 ml of water
- 10 ml of vinegar
- 1 Carnation
- 1 Bay leaf
- Salt and pepper

**Preparation:**

Melt the butter and mix it with a reduction made of water, vinegar, clove, bay leaf, and peppercorns. Whisk this mixture with the two egg yolks over a water bath (80 °C) and incorporate it drop by drop. Mix the finished Hollandaise sauce with pesto and add the finely chopped basil.

Spread the pasta squares in a baking dish and top with the chopped mushrooms and cooked ham. Then pour the hollandaise sauce over it and sprinkle with grated cheese.

Preheat the oven to 180 °C and bake the Maultaschen for about 15 minutes until they are golden yellow.

**Vegetarian alternative:**

For a vegetarian alternative, use vegetable dumplings and omit the cooked ham.

Enjoy your meal!
