Favorite recipe: Gratinated Maultaschen

Our head chef Florian Grünzinger has shared his recipe for “gratinated Maultaschen” with us. A true classic. And maybe, with a salad, it’s also justifiable. Have fun trying out the recipe.

Ingredients (for 4 people):

  • 500 g dumplings
  • 60 g cooked ham
  • 30 g of mushrooms
  • 80 g grated cheese (Emmental)
  • 60 g Pesto
  • 10 g basil
  • Hollandaise sauce
  • 1 onion
  • 2 egg yolks
  • 100 g of butter
  • 60 ml of water
  • 10 ml of vinegar
  • 1 Carnation
  • 1 Bay leaf
  • Salt and pepper

Preparation:

Melt the butter and mix it with a reduction made of water, vinegar, clove, bay leaf, and peppercorns. Whisk this mixture with the two egg yolks over a water bath (80 °C) and incorporate it drop by drop. Mix the finished Hollandaise sauce with pesto and add the finely chopped basil.

Spread the pasta squares in a baking dish and top with the chopped mushrooms and cooked ham. Then pour the hollandaise sauce over it and sprinkle with grated cheese.

Preheat the oven to 180 °C and bake the Maultaschen for about 15 minutes until they are golden yellow.

Vegetarian alternative:

For a vegetarian alternative, use vegetable dumplings and omit the cooked ham.
